My Experience


Apprenticeship in Commercial Cookery. Included some Fine Dining. Trained by “old school” chefs.

Hotel restaurants – up to 4 star. Highly commended for my soups and sauces. Commended for pastries. Included Corporate functions, Golf Days, Christmas & Easter festivities, Weddings, Mother’s & Father’s Day and Room Service – including unusual specialised requests at short notice. International & Australian menus.

Restaurants. Asian, Italian & Mediterranean – both upmarket.

Clubs. High pressure environment. Regularly used initiative to problem solve. Often complimented by corporate and private customers.

Pubs & Hotels. Good old Australian cooking.

Cafes. Large and busy, in major shopping centre. Also, an upmarket European style cafe/restaurant/bar.

Private functions. In-home catering for upmarket clients – self employed.
